Shortbread

Shortbread is super easy to make so there is pretty much zero chance of going wrong!

You only need sugar, butter, flour, an oven, a baking tray a little bit of time. I use a mix of castor and light brown sugar to make it extra tasty.

250g butter

325g flour

60g castor sugar

60g light brown sugar

Preheat the oven to 150 degrees for a normal oven and 130 degrees for a fan oven.

1: Pour the flour into a mixing bowl and add the butter (straight from the fridge and cut into squares).

2: Gently rub the flour and butter together to make it a crumbly mixture.

3: Add the sugar and work the mixture until it forms a ball.

4: Flatten it out on a lightly floured surface (or straight onto the baking tray with baking paper) and press it into a square or circular shape with an even surface.

5: Score the surface with a knife to mark out the pieces and put it in the oven.

6: Bake for about 25-30 minutes. The shortbread should be a light colour so make sure it doesn’t brown too much.

7: Once you have removed it from the oven, and whilst it is still warm, cut the shortbread into pieces and then leave to cool completely. Enjoy!
