Date and Pine Nut Biscuits

To continue my biscuit bender and to use yet more dates here is a recipe for date and pine nut biscuits with brown sugar – my favourite sugar!

What you need to make about 15 biscuits:

100g butter/ soya butter

150g wholemeal flour

100g brown sugar

40g pine nuts

A date for each biscuit

What you need to do:

1: Heat the oven to 175C.

2: Pour all the ingredients, bar the dates, into a bowl and mix well until you have a smooth dough.

3: Shape into discs and place a date in the centre of each.

4: Bake for 10 minutes or until lightly golden.
