I have moved into my wonderful new flat with views of the Olympic Village and Canary Wharf and, best of all, a great kitchen! I put the oven to the test yesterday and made almond jammy didgers. You have perhaps noticed that they may be inspired by those famous biscuits “Jammy Dodgers”. This is no coincidence. I have been thinking about classic biscuits recently like ginger nuts and crunch creams and shall make it a project to make my own versions of these.
What you need:
150g self-raising flour
70g light brown sugar
150g powdered almonds
several dollops of strawberry jam
What you need to do:
1. Heat the oven to 180C.
2. Put the butter and sugar in a bowl and blend together with a fork.
3. Blend the powdered almond into the butter mixture and then gradually blend in the flour.
4. Shape blobs of the mixture, about the size of a ping pong ball, into rectangles and make little troughs down the centre. Place them on a baking tray with greaseproof paper and spoon a touch of jam into the troughs.
5. Bake for about 15 minutes until the biscuits are lightly golden.
Makes: around 15 biscuits. Takes: around 25 minutes.
